Gluten Free Appetizer - Ham Roll Ups



This is not just a rumor, there are some people who do not like to bake or cook. I will admit, I am one of these people. Truth be told, I do enjoy cooking way better than baking. I always considered myself a microwave mom. I have even been known to cook the Thanksgiving turkey (20-22 lbs) in the microwave. You may be laughing, but they were some of the best turkeys I ever made (and a turkey, is one thing I do very well). Sorry for getting off the subject at hand.

Oh, now I remember Ham Roll Ups. Everywhere I have taken these they have been a hit. This is a simple, 3 ingredient recipe. Ham lunch meat, cream cheese and green onions. I am not a fan of green onions or cream cheese. However, I love these and they go down way too easy. There have been a lot of people who tell me, they don't like the ingredients, but love these. I am not sure where this recipe came from. I have been making them for years now. And I have a few tricks to making these, which helps to keep them simple.

1 lb ham lunch meat -pre packaged will help, instead relying on deli to get thickness right
1 1/3 packs cream cheese -8oz pack size
10-12 Green onions- cleaned and dried

Tip #1. Alternate, layering lunch meat and a folded paper towel in between each piece of meat- cover and place in fridge a few hours or over night. This will absorb the excess moisture, allowing you to spread cream cheese more evenly.

Tip #2. Allow cream cheese to reach room temperature. If you forget to do so, unwrap cream cheese and place on microwavable plate and place in microwave for a few seconds at a time, until it becomes easily spreadable, without effort.

Now you are ready to begin.

Remove ham from paper towel, lay on a flat surface:



Spread with cream cheese. You can see, this does not have to look pretty.


Place green onion on top of cream cheese.
Note: I rolled from the ragged edge towards the nicer looking edge.


Simply cut off excess onion. Lay aside in case you need more onions.
You can use the just the greens, if needed.

Next you will cut each roll into slices, approximately 1/4 in thick.

I always make a double recipe, they seem to disappear as fast as I make them (by myself as well as the rest of the family).

There you have it, a simple, pleasing, gluten free appetizer.
